30 Day Anti-Inflammatory Meal Program

Would you like to dedicate yourself to 30-days on a whole-foods-based anti-inflammatory diet?

Do you wonder what you would feel like after the 30 day challenge? Maybe your digestive issues would improve. Maybe the itchy eczema on your hands would go away. Maybe your headaches would become a thing of the past.

Do you worry that you’re too busy to prepare so much healthy food week after week?

Victoria Cortes Personal Chef Service, LLC is here to help you. We are offering a 4-week program in which we prepare and deliver ALL the anti-inflammatory meals you will need to successfully complete the 30-day challenge.

Our meals are interesting, varied, and delicious. We make it easy for you to continually eat healthy, nutrient-dense food. Once you start feeling amazing on our food, you won’t want to stop.

You are bound to be successful with our help. Imagine how amazing you will feel after 30 days of eating delicious anti-inflammatory meals. Imagine how much closer you will be to meeting your health goals.

What is a 30-day Anti-Inflammatory Meal Challenge?

Keep in mind that this is not a plan that we developed. If you would like to learn more about whether an anti-inflammatory diet would be a good fit for you, we can send you some resources and lead you to websites where you can find support.

For 30 days, you will enjoy high quality proteins like grass-fed beef, organic chicken, wild fish, and organic, pastured eggs along with organic vegetables and fruits. Each dish is seasoned with fresh herbs and spices and made with quality oils like olive oil, avocado oil, and coconut oil. You will avoid the following food ingredients that have been shown to cause inflammation in the body: grains, dairy, legumes, soy, sugar, artificial sugar, and alcohol.

The goal is to enjoy three satisfying, complete meals each day and to limit your reliance on snacking. The aim is to focus on meals based on whole foods- as in proteins with vegetables, greens, and fruit along with healthy fats. If you eat enough healthy food at every meal, you will be less inclined to want to snack between meals.

 After the 30-day challenge is over, the next phase of the challenge is to gradually reintroduce the foods that you have been avoiding in order to see how your body reacts. We can send you resources to help guide you during the reintroduction phase.

When does this challenge take place?

The 30-day challenge begins on September 6th, 2022, the day after Labor Day. The challenge ends after your last meal on October 5th.

Before September 6th, and on October 6th, it is a good idea to take notes on how you feel before and after the challenge. Chances are that you may slim down after consuming such nutritious food for 30 days, so it is also a good idea to take your measurements before and after the challenge so you can track your progress.

The delivery schedule is as follows:

  • Tuesday, September 6th & Friday, September 9th (week 1)
  • Tuesday, September 13th & Friday, September 16th (week 2)
  • Tuesday, September 20th & Friday, September 23rd (week 3)
  • Tuesday, September 27th & Friday, September 30th (week 4)
  • Tuesday, October 4th (the last few meals of week 4)

*delivery will occur in the late afternoon at a pre-determined time.

What will I receive?

Each week, for 4 weeks, you will receive delicious, anti-inflammatory meals on your doorstep. The meals will come to you in 2 deliveries each week so that you will always have freshly prepared food on hand.

Who is the ideal participant for this challenge?

All participants in this month-long dietary challenge need to be cleared by their medical provider before beginning. The ideal participant will not have food allergies and will be open to trying a wide variety of ingredients and flavor profiles. We will consider your preferences when developing the final menu for the 30-days. Participants will be able to substitute optional proteins if they do not like the main protein in a dish. We can accommodate minor preferences within the food preparation, like those pertaining to spice level and salt level. 

How does it work?

Twice a week, for 4 weeks, we will prepare the meals in a licensed commercial kitchen. We will properly chill the food for safe transport, and place it in food storage containers. The containers will be placed in an insulated bag with an icepack. We will leave the insulated bag on your doorstep at a pre-determined time on delivery day. On the next delivery day, you will place the clean food storage containers inside the insulated bag along with the ice pack. When we deliver the food to you that day, we will pick up the containers and the insulated bag in order to use them for your meals on the following week.

These meals are not packaged as individual meals. Instead, each prepared item is packaged in its own container. Some items are to be enjoyed during more than one meal.

How much does it cost and what does it include?

  • $600 per week per person plus Virginia Sales Tax and Arlington Meals Tax
  • Each additional household member is $500 per week, plus Virginia Sales Tax and Arlington Meals Tax
  • Advanced payment for all 4 weeks is required in order to reserve your spot in this program.

What is included in that price?

  • Meals prepared by experienced professional chefs in a certified, commercial kitchen
  • The cost of high-quality proteins, produce, and dry goods: grass-fed beef, organic chicken, wild seafood, pastured eggs, organic vegetables and organic fruit
  • Made-from-scratch additions, like chicken broth, sausage, and mayonnaise made with avocado oil and pastured eggs.
  • 2 deliveries per week: Tuesdays and Fridays
  • Food storage containers, insulated cooler bag, ice packs
  • Warming instructions and detailed meal plan with recommendations on what meals to consume first for optimal freshness.

Who is Victoria Cortes and what is her experience?

Victoria Cortes is a professional chef with 16 years of experience. She has been operating Victoria Cortes Personal Chef Service since 2010.

Soon after launching her business, Victoria found that most of her clients were coming to her for help with following the special diets their medical providers recommended they try. These clients found that avoiding certain foods and focusing on other foods helped them reduce their problematic symptoms and promote healing.

Victoria has worked with professional athletes who are serious about reducing inflammation in their bodies. These athletes tracked their food sensitivities and would give Victoria a list of foods that they needed to avoid. On a weekly basis, Victoria prepared custom menus for the athletes that were full of delicious meals that did not seem like “diet food”.

Victoria is not a nutritionist. She is a professionally-trained chef who helps her clients follow the nutrition advice they have been given from their medical providers.

Victoria has personally experienced how amazing it feels to complete a 30-day anti-inflammatory meal plan, and wants to help others to do the same.
